Lobster Fried Ho Fun

Another treat for the Chinese New Year fortnight. Managed to get a frozen Canadian lobster. Added some other bits of seafood and then fried it with garlic, rice wine, soy and oyster sauce, then poured stock over it and thickened with cornflour. Then I poured the whole lot over plain fried ho fun (with a bit of sweet and light soy). This is my version of "wat tan hor" but without the egg cuz I never seem to get it right and always overcook the egg.

How delicious your dish is! It must be quite difficult and expensive to get North American lobster in the UK because it is difficult to get them where I live, and I live in N.A. :) Your dish looks fabulous. I love the flavors of garlic and oyster. I have never paired lobster with oyster sauce before, I bet it was good. Was it good?

Believe it or not, its cheaper than buying a standard (non lobster) fried ho fun dish in a restaurant.

The oyster sauce was used as a light marinade for all the ingredients before they were fried. After the stock was added, the oyster sauce taste was not prominent at all. It was a good dish because the contents of the lobster head (minus the dirty bits!), including the red roe, flavoured the sauce.

Yeah, it was done in the same style as sang har meen, except lobster has lost some of its taste because it was frozen.

hi^^ nice to meet u. Thankx for your comment. The spider crab is 2.5 kg if i not mistaken.. not really know spider crab can caught in uk.. is the price consider expensive, cos i only know the crab is imported. You are a IT worker but know cooking? amazing o^^

Lobster hor fun is something I can only crave for here. If I attempted to buy and cook it, I'd be too afraid of destroying the dish (and my hard earned cash in the process hahaha), coz I can sometimes be a disaster in the kitchen. :-P Thanks for the visual feast.

Never heard of lobster cooked this way...pretty adventurous, i must say...and UKP3? i can only envy from a distance...with a bit of wok hei and some pickled chillies, it'll be perfect.

my goodness. That is one expensive hor fun! if cooked in australia I mean. Looks like u got a good buy there! hehe.. still, it looks lovely! I can only imagine the sauce sipping into the lobster.. mmmm....

grandma taught me that the trick to the "flower egg" is to switch off the fire before adding the egg. Scramble gently and serve immediately. hope that helps.

Expensive ingredients but you got it for a steal! You like hor fun? Have tried lobster with crispy egg noodles or braised mee.
